Lentil Kofta So Good You Won't Miss the Meat - Try This Easy Way! 😋✨

ingredients:
One 15-ounce can (425g) brown or green lentils, rinsed and drained very well
1/4 cup (20g) breadcrumbs (gluten-free if needed)
1/4 cup (10g) finely chopped fresh parsley
1/4 cup (10g) finely chopped fresh mint
1 small onion, very finely grated or minced
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon smoked paprika (optional)
Salt and black pepper to taste
2 tablespoons olive oil for cooking

directions:
In a medium bowl, mash the drained lentils with a fork until mostly broken down but still with some texture.
Add the breadcrumbs, chopped parsley, chopped mint, grated onion, minced garlic, cumin, coriander, smoked paprika (if using), salt, and pepper.
Mix everything together with your hands until well combined and the mixture holds together.
Take small portions of the mixture (about 2 tablespoons) and shape them into small oval shapes or balls, like traditional kofta.
Heat the olive oil in a large skillet over medium heat.
Carefully place the lentil kofta in the hot skillet, making sure not to overcrowd the pan. Cook in batches if necessary.
Cook for 5-7 minutes, turning occasionally, until golden brown and cooked through on all sides.
Serve hot with tahini sauce, hummus, pita bread, or a side salad.
