Corn Casserole
Ingredients:
- 1 can 15 oz cream-style corn
- 1/2 cup chopped green onions optional, for garnish
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 8 oz cream cheese, softened
- 2 cans 15 oz each sweet corn, drained
- 1 teaspoon garlic powder
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon onion powder
- 1 cup Jiffy corn muffin mix or similar
- Salt and pepper to taste
Instructions:
1. Preheat the Oven:
- Get your oven nice and toasty by preheating it to 350F (175C).
2. Prepare the Mixture:
- In a large mixing bowl, combine the softened cream cheese and melted butter. Mix it up until you have a smooth consistency.
- Next, stir in the sour cream, shredded cheddar cheese, sugar, garlic powder, onion powder, salt, and pepper. Make sure everything is well blended.
3. Add the Corn and Muffin Mix:
- Gently fold in the drained sweet corn, cream-style corn, and Jiffy corn muffin mix. Mix until everything is just combined; don’t overdo it!
4. Transfer to Baking Dish:
- Pour this creamy mixture into a greased 9x13 inch baking dish. Spread it out evenly.
5. Bake the Casserole:
- Place the dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and the casserole is nicely set.
6. Cool and Serve:
- Once done, let it cool for a few minutes. If you like, sprinkle some chopped green onions on top for a fresh garnish before digging in!
