Ingredients
For the Lamb Chops
8 lamb chops (about 1 inch thick)
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

For the Lobster Mash
1 lb (450g) potatoes, peeled and chopped
1/2 cup heavy cream
4 tablespoons unsalted butter
1 cup cooked lobster meat, chopped

For the Asparagus
1 lb (450g) asparagus, trimmed
1 tablespoon olive oil
Salt and pepper (to taste)
Instructions
Prepare the Lobster Mash
Boil Potatoes: In a large pot, add the chopped potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot.
Mash Potatoes: Add heavy cream, butter, salt, and pepper to the potatoes. Mash until smooth. Fold in the chopped lobster meat and set aside.
Cook the Asparagus
Sauté Asparagus: In a skillet, heat olive oil over medium heat. Add the trimmed asparagus, season with salt and pepper, and sauté for about 5-7 minutes until tender-crisp. Remove from heat and set aside.
Cook the Lamb Chops
Season Lamb: In a bowl, combine olive oil, minced garlic, chopped rosemary, salt, and pepper. Rub the mixture all over the lamb chops.
Sear Lamb Chops: In the same skillet used for the asparagus, add the lamb chops over medium-high heat. Cook for about 3-4 minutes on each side for medium-rare, or until desired doneness is achieved. Remove from heat and let rest for a few minutes.
Serve
Plate the Dish: On each plate, create a bed of lobster mash. Top with lamb chops and arrange asparagus on the side.
