🍋 Craving pasta but keeping it healthy? Say hello to your new obsession—Roasted Veggie & Chicken Chickpea Pasta with Avocado Tzatziki! 🥑✨ Packed with vibrant veggies, juicy herb-marinated chicken, and creamy avocado tzatziki, this saucy bowl hits all the right notes.

Ingredients (Serves 4 | 390 cal per serving):
• 8 oz chickpea pasta
• 2 chicken breasts, sliced into strips
• 1 zucchini, sliced
• 1 cup cherry tomatoes, halved
• 2 tbsp olive oil
• Salt, pepper, garlic powder to taste
• 1 tsp dried oregano, basil, rosemary mix (herb marinade)

Avocado Tzatziki Sauce:
• 1 ripe avocado
• ½ cup plain Greek yogurt (for probiotics!)
• Juice of 1 lemon
• 1 garlic clove
• 2 tbsp fresh dill, chopped
• Salt & pepper to taste

Instructions:
1. Toss chicken strips with olive oil, salt, pepper, garlic powder, and herbs. Grill or sauté until cooked through.
2. Roast zucchini & tomatoes with olive oil, salt & pepper at 400°F for 20 mins.
3. Cook chickpea pasta as per package instructions, drain, and set aside.
4. Blend avocado, yogurt, lemon juice, garlic, dill, salt, and pepper until creamy.
5. Combine pasta, veggies, and grilled chicken in a large bowl, then generously drizzle avocado tzatziki on top. Toss gently and enjoy!
