Spicy Jalapeño Popper Chili
Ingredients:
1 lb ground beef or turkey
1 medium onion, diced
3 cloves garlic, minced
2 cans (15 oz each) diced tomatoes
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 cup cream cheese, softened
1 cup shredded cheddar cheese
1 cup diced jalapeños (fresh or pickled)
2 cups chicken or vegetable broth
1 tbsp chili powder
1 tsp cumin
Salt and pepper to taste
Optional toppings: sour cream, additional shredded cheese, chopped green onions
Directions:
In a large pot over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat. Add the diced onion and minced garlic, cooking until the onion is translucent.
Stir in the diced tomatoes, kidney beans, black beans, cream cheese, diced jalapeños, and broth. Add the chili powder, cumin, salt, and pepper, mixing well to combine.
Bring the chili to a simmer, then reduce the heat to low and let it cook for about 20-30 minutes, stirring occasionally, until heated through and flavors meld.
Just before serving, stir in the shredded cheddar cheese until melted and creamy.
Serve hot, garnished with optional toppings like sour cream, extra cheese, and chopped green onions.
