One-Pot Chicken Parmesan Pasta
Ingredients:
12 ounces penne pasta
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes (optional)
4 cups chicken broth
1 can (14.5 ounces) diced tomatoes, undrained
1 cup marinara sauce
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
Fresh basil, for garnish
Salt and pepper to taste
Directions:
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken pieces, seasoning with salt and pepper, and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
In the same pot, add the minced garlic, Italian seasoning, and red pepper flakes, sautéing for about 1 minute until fragrant.
Pour in the chicken broth, diced tomatoes with their juices, and marinara sauce. Bring the mixture to a boil, then stir in the penne pasta. Reduce the heat to a simmer and cover the pot. Cook for about 12-15 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.
Return the cooked chicken to the pot, mixing well. Stir in the grated Parmesan cheese until melted and creamy. Top with shredded mozzarella cheese, cover, and let it sit for a few minutes until the cheese is melted.
