Italian Zuppa di Vongole (Clam Soup) 🇮🇹
Ingredients:
• 2 lbs fresh clams (900g)
• 2 tbsp olive oil (30ml)
• 2 garlic cloves, minced
• 4 cups fish stock (960ml)
• ½ cup white wine (120ml)
• Fresh parsley, for garnish
• Salt and pepper
Instructions:
1. Sauté garlic in olive oil, add clams and white wine, cover until clams open.
2. Add fish stock and simmer for 10 minutes.
3. Season, garnish with parsley, and serve with crusty bread.
