Decadent Triple Chocolate Pecan Layer Cake

Ingredients:

For the Cake:
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup warm water
1 teaspoon vanilla extract
1/3 cup vegetable oil
1 teaspoon distilled white vinegar
For the Vanilla Cream Layer:
1 cup heavy cream
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
For the Ganache:
1 cup heavy cream
8 ounces semi-sweet chocolate, chopped
Topping:
1/2 cup pecans, toasted and chopped
Directions:

Preheat oven to 350°F (175°C). Grease and flour an 8-inch cake pan.
In a large bowl, mix together flour, sugar, cocoa powder, baking soda, and salt. Add water, vanilla extract, oil, and vinegar. Stir until just combined. Pour batter into prepared pan.
Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
For the vanilla cream, whip heavy cream, confectioners' sugar, and vanilla extract until stiff peaks form. Spread over the cooled cake.
For the ganache, heat cream until it just begins to simmer, then pour over chopped chocolate. Let sit for one minute, then stir until smooth. Pour over the vanilla cream layer.
Sprinkle toasted pecans on top. Refrigerate until set, about 1 hour.
