For the Strawberry Cheesecake:

β’ 1 cup granulated sugar
β’ 3 tablespoons all-purpose flour
β’ 1 cup sour cream
β’ 4 large eggs
β’ 3 tablespoons strawberry extract
β’ Red food coloring (optional)
For the Vanilla Bean Mousse:
β’ 1 1/2 teaspoons gelatin powder
β’ 1 1/2 tablespoons cold water
β’ 2 1/3 cups heavy whipping cream
β’ 1/2 cup granulated sugar
β’ 2 1/2 teaspoons vanilla bean paste
For the Whipped Vanilla Icing:
β’ 2 cups heavy whipping cream
β’ 1 cup powdered sugar
β’ 1 teaspoon vanilla bean paste

Instructions:
