Apple Cobble
Ingredients:
Apple Filling:
- 3 1/2 – 4 lb. apples
- Freshly squeezed juice from 1 lemon
- 1/2 cup light brown sugar
- 1 tablespoon corn starch
- 3/4 teaspoon cinnamon (or more to taste)
- 1/4 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1/4 cup unsalted butter (cut into small cubes)
Topping:
- 2 cups all-purpose flour
- 1 cup sugar
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter (cold and cut into cubes)
- 3/4 cup whole milk
- 3 1/2 tablespoons cinnamon sugar (mixture of 1 1/2 teaspoon cinnamon and 3 tablespoons sugar)
Directions:
1. Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
2. Peel, core, and slice the apples. Place them in a large bowl and toss with the lemon juice to prevent browning.
3. Add light brown sugar, corn starch, cinnamon, nutmeg, and vanilla extract to the apples. Mix well to combine.
4. Transfer the apple mixture to the prepared baking dish and dot with small cubes of unsalted butter.
5. In a separate bowl, whisk together flour, sugar, baking powder, and salt for the topping.
6. Cut in the cold butter cubes using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
7. Stir in the whole milk until just combined to form a thick batter.
8. Drop spoonfuls of the topping evenly over the apple filling.
9. Sprinkle the cinnamon sugar mixture over the topping.
10. Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the apple filling is bubbly.
11. Remove from oven and let cool slightly before serving.
