Christmas Cookie Bars
Ingredients:
• 1 cup unsalted butter, melted
• 1 ½ cups light brown sugar, packed
• 2 teaspoons vanilla extract
• 2 large eggs
• 2 cups all-purpose flour
• 1 teaspoon baking powder
• ½ teaspoon salt
• 1 cup Christmas M&M’s, divided
• 1 cup semisweet chocolate chips
• ¼ cup Christmas sprinkles, divided
• Cooking spray, for greasing
Instructions:
1 Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan with cooking spray and line with parchment paper for easy removal.
2 Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter and light brown sugar until smooth. Add the eggs and vanilla extract, whisking until fully combined.
3 Add Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, stirring until just combined. Do not overmix.
4 Fold in the Mix-Ins: Gently fold in ¾ cup of the M&M’s, ¾ cup of the chocolate chips, and half of the sprinkles.
5 Bake the Bars: Spread the batter evenly into the prepared baking pan. Sprinkle the remaining M&M’s, chocolate chips, and sprinkles evenly on top.
6 Bake: Bake for 25–30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out mostly clean (a few moist crumbs are fine).
7 Cool and Slice: Allow the bars to cool completely in the pan before slicing into squares or rectangles.
