Coffee Cake Cookies
Ingredients
For the Cookies
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup sour cream
For the Streusel Topping
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/4 cup unsalted butter, melted
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
1. Preheat Oven and Prepare Pan:
- Preheat your oven to 350°F (175°C).
- Line baking sheets with parchment paper or silicone baking mats.
2. Make the Streusel Topping:
- In a small bowl, mix flour, brown sugar, and cinnamon.
- Stir in melted butter until the mixture is crumbly.
- Mix in walnuts or pecans if using. Set aside.
3. Prepare Cookie Dough:
- In a large bowl, beat the softened butter with granulated and brown sugar until creamy.
- Add eggs one at a time, beating well after each addition, followed by the vanilla extract.
- In another bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, alternating with sour cream, beginning and ending with the dry ingredients. Mix until just combined.
4. Shape and Bake:
- Use a cookie scoop or spoon to drop tablespoons of dough onto the prepared baking sheets.
- Sprinkle a generous amount of streusel topping over each cookie.
- Bake for 12-15 minutes, or until the edges are golden.
5. Cool and Serve:
- Allow cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
