Slow Cooker Loaded Baked Potato Casserole
Ingredients:
6 large russet potatoes, peeled and cubed
1 cup sour cream
1/2 cup cream cheese, softened
1/2 cup milk
1/2 cup butter, melted
2 cups shredded cheddar cheese (divided)
6 slices bacon, cooked and crumbled
1/4 cup chopped chives or green onions
Salt & black pepper, to taste
Instructions:
Lightly grease the slow cooker and add cubed potatoes.
In a bowl, mix sour cream, cream cheese, milk, butter, salt, and pepper until smooth.
Pour mixture over potatoes and stir to coat.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
Stir in 1 1/2 cups cheddar cheese and half of the bacon.
Top with remaining cheese and bacon, cover for 10 minutes until melted.
