Creamy Alfredo Shrimp with Spinach and Tomatoes
Luxurious Garlic Parmesan Shrimp Alfredo with Wilted Spinach and Burst Cherry Tomatoes
Ingredients:

1 lb large shrimp, peeled and deveined
8 oz fettuccine pasta
3 tablespoons olive oil, divided
4 cloves garlic, minced
1 pint cherry tomatoes
4 cups fresh spinach, packed
2 tablespoons unsalted butter
1 cup heavy cream
1 cup freshly grated Parmesan cheese
1/4 cup cream cheese, softened
1/2 teaspoon red pepper flakes (optional)
1 teaspoon Italian seasoning
Salt and freshly ground black pepper, to taste
Fresh basil leaves, torn for garnish
Additional grated Parmesan for serving

Directions:

Cook fettuccine according to package directions until al dente. Reserve 1/2 cup pasta water before draining.
Pat shrimp dry with paper towels and season with salt and pepper.
In a large skillet, heat 2 tablespoons olive oil over medium-high heat. Add shrimp and cook for 1-2 minutes per side until pink and just cooked through. Remove to a plate and set aside.
In the same skillet, add remaining tablespoon of olive oil. Add cherry tomatoes and cook for 3-4 minutes until they begin to burst and blister.
Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
Add spinach to the skillet and cook, stirring frequently, until just wilted, about 1-2 minutes.
Reduce heat to medium-low and add butter to the skillet, allowing it to melt.
Pour in heavy cream and add cream cheese, stirring until cream cheese is fully melted and incorporated.
Gradually add Parmesan cheese, stirring continuously until the sauce is smooth.
Season with Italian seasoning, red pepper flakes (if using), salt, and pepper.
If the sauce is too thick, add reserved pasta water, a tablespoon at a time, until desired consistency is reached.
Add cooked pasta to the sauce, tossing to coat evenly.
Gently fold in the cooked shrimp, heating just until warmed through.
Serve immediately, garnished with torn basil leaves and additional Parmesan cheese.
