Tiramisu Cookie Sandwiches πͺβοΈπ°
Ingredients:
1 cup unsalted butter, softened π§
1 cup granulated sugar π
1 cup brown sugar, packed π―
2 large eggs π₯
2 teaspoons vanilla extract π¦
3 cups all-purpose flour πΎ
1 teaspoon baking soda π₯
1/2 teaspoon salt π§
1 cup espresso or strong coffee, cooled βοΈ
1 cup mascarpone cheese π§
1 cup heavy cream π₯
1/4 cup powdered sugar π¬
Cocoa powder, for dusting π«
Chocolate shavings, for garnish π«
Directions:
1. First things first, preheat your oven to 350Β°F (175Β°C) and line two baking sheets with parchment paper for easy cleanup.
2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until itβs light and fluffy. Add the eggs one at a time, mixing well, and then stir in the vanilla extract for that extra flavor.
3. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mix to your wet ingredients until just combinedβdonβt overmix!
4. Now, scoop tablespoon-sized portions of dough onto your prepared baking sheets, placing them about 2 inches apart. Bake for 10-12 minutes or until the edges are lightly golden. Let them cool on the sheets for about 5 minutes, then transfer to wire racks to cool completely.
5. While those cookies are cooling, letβs make the filling! In a medium bowl, combine mascarpone cheese, heavy cream, and powdered sugar, then whip it until soft peaks form.
6. To assemble, dip the flat side of each cookie into the cooled espresso for a few seconds (but donβt soak them too long!). Spread a generous amount of the mascarpone filling on the flat side of one cookie, then top it with another cookie to create a delightful sandwich.
7. Finally, dust the tops of your cookie sandwiches with cocoa powder and finish them off with some chocolate shavings before serving.
