Savory Cajun Chicken over Creamy Parmesan Linguine
Ingredients
For the Cajun Chicken:
• 2 boneless, skinless chicken breasts, cut into strips
• 2 tablespoons olive oil
• 2 tablespoons Cajun seasoning
• 1 teaspoon smoked paprika
• ½ teaspoon garlic powder
• Salt and black pepper, to taste
For the Pasta & Sauce:
• 12 oz linguine pasta
• 4 cloves garlic, minced
• 1 cup heavy cream
• ½ cup chicken broth
• ½ cup grated Parmesan cheese
• Fresh parsley, chopped (for garnish)
Instructions
1️⃣ Season the Chicken:
• In a bowl, mix Cajun seasoning, smoked paprika, garlic powder, salt, and pepper.
• Coat chicken strips thoroughly in the spice blend.
2️⃣ Cook the Chicken:
• Heat olive oil in a large skillet over medium-high heat.
• Add seasoned chicken and cook for 6–7 minutes, turning occasionally, until golden brown and fully cooked.
• Remove from skillet and set aside.
3️⃣ Cook the Pasta:
• In a large pot, boil salted water.
• Cook linguine according to package instructions. Drain, reserving a bit of pasta water.
4️⃣ Make the Sauce:
• In the same skillet, add a splash of oil if needed. Sauté garlic for 1 minute.
• Pour in chicken broth, scraping up browned bits.
• Stir in heavy cream and bring to a simmer for 2–3 minutes.
• Add Parmesan cheese and stir until melted and creamy.
5️⃣ Combine:
• Add cooked linguine to the sauce, tossing to coat. Use reserved pasta water if needed to loosen the sauce.
• Return chicken to skillet and stir to combine.
6️⃣ Serve:
• Garnish with chopped fresh parsley. Serve immediately and enjoy creamy, spicy perfection.
