Basil Butter Shrimp with Tomato Pasta
Herb-Infused Butter Shrimp over Roasted Tomato Linguine
Ingredients:
1 lb large shrimp, peeled and deveined
4 tablespoons unsalted butter
4 cloves garlic, minced
1/4 cup fresh basil leaves, chopped, plus more for garnish
1 teaspoon red pepper flakes (adjust to taste)
12 oz linguine pasta
2 cups cherry tomatoes, halved
1 tablespoon olive oil
1 small yellow onion, finely diced
2 tablespoons tomato paste
1 can (14 oz) crushed tomatoes
1/2 cup vegetable broth
1 teaspoon dried oregano
1/2 teaspoon dried thyme
2 tablespoons fresh lemon juice
1/4 cup grated Parmesan cheese, plus more for serving
Salt and black pepper to taste
Lemon wedges for serving
Directions:
Preheat oven to 400°F (200°C). On a baking sheet, toss cherry tomatoes with 1 tablespoon olive oil and season with salt and pepper. Roast for 15-20 minutes until blistered and slightly caramelized.
Meanwhile, bring a large pot of salted water to a boil. Cook linguine according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
In a small bowl, mix 3 tablespoons of butter with 2 minced garlic cloves and 2 tablespoons chopped basil. Season with a pinch of salt and pepper. Set aside.
In a large skillet over medium heat, heat 1 tablespoon of butter. Add remaining garlic and red pepper flakes, cooking for 30 seconds until fragrant.
Add diced onion to the skillet and cook until translucent, about 3-4 minutes.
Stir in tomato paste and cook for 1 minute. Add crushed tomatoes, vegetable broth, dried oregano, and dried thyme. Simmer for 10 minutes until slightly thickened.
While the sauce simmers, pat shrimp dry with paper towels and season with salt and pepper.
In another large skillet, melt the prepared basil butter over medium-high heat. Add shrimp in a single layer and cook for 2 minutes per side until pink and opaque. Remove from heat.
Add the drained pasta to the tomato sauce, tossing to coat. If needed, add some reserved pasta water to reach desired consistency.
Stir in roasted cherry tomatoes, remaining fresh basil, lemon juice, and Parmesan cheese.
Serve pasta topped with basil butter shrimp, additional Parmesan cheese, fresh basil leaves, and lemon wedges.
