Easy Baked Maple Almond Coconut Snack Mix: Vegan & Addictive π±ππ
ingredients:
2 cups (280g) raw whole almonds
1 cup (70g) large unsweetened coconut flakes (or shredded)
ΒΌ cup (60ml) pure maple syrup
1 tbsp melted coconut oil
Β½ tsp ground cinnamon (optional)
Β½ tsp sea salt
directions:
1. Preheat oven to 300Β°F (150Β°C). Line a large baking sheet with parchment paper.
2. In a medium bowl, combine the almonds, coconut flakes, maple syrup, melted coconut oil, optional cinnamon, and sea salt.
3. Toss everything together thoroughly until the almonds and coconut are evenly coated with the maple syrup mixture and spices.
4. Spread the mixture in a single layer on the prepared baking sheet. Try to ensure the coconut flakes aren't too clumped together to allow for even toasting.
5. Bake for 15-25 minutes, stirring gently halfway through. Watch very carefully, especially during the second half, as both coconut and maple syrup can burn quickly. Bake until the almonds are lightly toasted and the coconut is golden brown and fragrant.
6. Let the mixture cool completely on the baking sheet. It will crisp up as it cools.
7. Once cool, break apart any large clumps. Store the mix in an airtight container at room temperature for up to 2 weeks.
