Ingredients:
For the Cajun Chicken:

2 boneless skinless chicken breasts

2 tbsp Cajun seasoning (store-bought or homemade)

1 tbsp olive oil

1 tbsp butter

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

For the Alfredo Sauce:

2 tbsp butter

1 tbsp olive oil

3 garlic cloves (minced)

1 cup heavy cream

1/2 cup chicken broth

1 cup freshly grated Parmesan cheese

1/2 cup grated mozzarella cheese

1/2 tsp Cajun seasoning

1/4 tsp paprika

Salt and pepper to taste

For the Pasta:

8 oz fettuccine or your preferred pasta

Salt for water

To Garnish:

Fresh parsley (chopped)

Grated Parmesan cheese (optional)

Instructions:

Prepare the Pasta:

Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente.

Drain and set aside, saving a little pasta water for the sauce if needed.

Cook the Cajun Chicken:

Season both sides of the chicken breasts with Cajun seasoning, garlic powder, onion powder, salt, and pepper.

Heat the olive oil and butter in a large skillet over medium-high heat.

Add the chicken breasts and cook for about 5-6 minutes per side, or until fully cooked through and golden brown.

Remove the chicken from the skillet and set aside. Slice it into strips once rested.

In the same skillet, add the remaining butter and olive oil. Once melted, sauté the minced garlic until fragrant (about 1 minute).

Bring the mixture to a simmer, then reduce the heat and let it cook for 3-4 minutes until it thickens slightly.

Stir in the Parmesan and mozzarella cheese, Cajun seasoning, paprika, salt, and pepper. Continue stirring until the cheese has melted and the sauce is creamy.

Combine the Pasta and Sauce:

Add the cooked pasta to the sauce, tossing to coat. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

Add the sliced Cajun chicken on top of the pasta.

Serve:

Garnish with fresh chopped parsley and a sprinkle of grated Parmesan cheese (optional).
