1 1/2 lbs ground chicken
1/2 cup breadcrumbs (preferably Italian-style)
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/2 cup milk
1 large egg
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon onion powder
Salt and pepper to taste
1/2 cup shredded mozzarella cheese (for topping)
1/4 cup grated Parmesan cheese (for topping)
1 tablespoon olive oil (for greasing)

Directions:

Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a loaf pan with olive oil or line with parchment paper for easy cleanup.
Mix the Meatloaf: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, fresh parsley, milk, egg, dried oregano, basil, onion powder, salt, and pepper. Mix until just combined, but be careful not to overwork the meat to keep it tender.
