Slow Cooker Pot Roast
Ingredients:
• 3–4 lb chuck roast
• 1 lb baby carrots
• 1 onion, sliced
• 3 cups beef broth
• 2 tbsp tomato paste
• 2 tsp garlic powder
• 1 tsp thyme
• Salt & pepper to taste
• 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
For serving:
• Mashed potatoes (your favorite kind!)
Directions:
1. Season roast with salt, pepper, garlic powder, and thyme.
2. Place roast, carrots, and onions in slow cooker.
3. Stir broth and tomato paste together and pour over meat.
4. Cook on LOW for 8–9 hours or HIGH for 4–5 hours until fork-tender.
5. (Optional) Mix cornstarch and water, stir into broth, and cook 10 more minutes to thicken.
6. Serve over mashed potatoes with gravy spooned on top!
