Pan Seared Steaks with Sauteed Mushrooms and Roasted Garlic Gorgonzola Butter
Ingredients:
For the sauteed mushrooms:
1/2 tablespoon oil
1/2 tablespoon butter
8 ounces mushrooms, sliced
1 onion, sliced or diced
2 cloves garlic, chopped
1/2 teaspoon thyme, chopped
1/2 cup beef broth or chicken broth
Salt and pepper to taste
1 tablespoon parsley, chopped (optional)
For the pan-seared steaks:
1 tablespoon oil
2 (6 ounce) steaks (strip loin, rib eye, etc.)
Salt and pepper or steak seasoning to taste
2 tablespoons roasted garlic gorgonzola butter
Instructions:
Heat oil and butter in a pan over medium-high heat. Add mushrooms and onions, cooking until caramelized, about 15-20 minutes.
Add garlic and thyme, cooking until fragrant, about 1 minute.
Add broth and deglaze the pan. Season with salt and pepper, sprinkle parsley, and set aside.
Heat oil in a heavy-bottomed pan over medium-high heat. Season steaks and sear until desired doneness, about 2-4 minutes per side.
Top steaks with sautéed mushrooms and roasted garlic gorgonzola butter.
