🥧 Niflettes (Pastry Cream Tarts) 🍮
Mini puff pastry tarts filled with smooth custard cream, eaten on All Saints’ Day in Provins.
Ingredients:
• 1 puff pastry sheet
• 500 ml milk
• 100 g sugar
• 3 egg yolks
• 40 g cornstarch
• 1 tsp vanilla extract
• 1 egg (for glazing)
Instructions:
1️⃣ Preheat oven to 180°C (350°F). Cut puff pastry into circles and place in muffin molds.
2️⃣ Heat milk with vanilla until steaming.
3️⃣ In a bowl, whisk egg yolks with sugar and cornstarch until pale.
4️⃣ Slowly pour warm milk into yolk mixture, whisking constantly.
5️⃣ Return to saucepan and cook until thickened into custard.
6️⃣ Fill pastry shells with custard and brush edges with beaten egg.
7️⃣ Bake 15–20 minutes until puffed and golden.
8️⃣ Cool slightly before serving warm.
