Traditional Cheese Scones ๐งโจ
Light, fluffy, and packed with lovely cheesy goodness โ perfect for picnics, lunchboxes, or a proper British afternoon tea with a twist!
Ingredients:
๐ฅฃ Self-raising flour: 225g, plus extra for dusting
๐ง Cold unsalted butter: 55g, diced
๐ง Sea salt: ยฝ tsp
๐ง English mustard powder: ยฝ tsp (optional, for extra zing)
๐ง Mature cheddar cheese: 100g, grated
๐ฅ Whole milk: 120ml, plus extra for brushing
๐ฅ Egg: 1, beaten (for glazing)
Method:
๐ณ Preheat the oven to 220ยฐC (200ยฐC fan) and lightly grease a baking tray.
๐ฅฃ Tip the flour into a large mixing bowl and rub the butter in with your fingertips until it resembles fine breadcrumbs.
๐ง Stir in the salt, mustard powder, and most of the grated cheese, saving a little for topping.
๐ฅ Gradually add the milk, mixing with a knife until you form a soft, but not sticky, dough.
๐งค Turn the dough out onto a floured surface and knead very lightly to bring it together.
๐งฒ Pat the dough out to about 2cm thickness and cut into rounds with a 5cm cutter, pressing straight down without twisting.
๐ฅ Place onto the prepared tray, brush with beaten egg, and sprinkle the tops with the remaining cheese.
๐ฅ Bake for 10โ12 minutes until risen, golden, and smelling irresistible.
๐ง Cool slightly on a wire rack before serving โ if you can resist!
