Light, fluffy, and packed with lovely cheesy goodness โ€” perfect for picnics, lunchboxes, or a proper British afternoon tea with a twist!

Ingredients:
๐Ÿฅฃ Self-raising flour: 225g, plus extra for dusting
๐Ÿงˆ Cold unsalted butter: 55g, diced
๐Ÿง‚ Sea salt: ยฝ tsp
๐Ÿง‚ English mustard powder: ยฝ tsp (optional, for extra zing)
๐Ÿง€ Mature cheddar cheese: 100g, grated
๐Ÿฅ› Whole milk: 120ml, plus extra for brushing
๐Ÿฅš Egg: 1, beaten (for glazing)

Method:
๐Ÿณ Preheat the oven to 220ยฐC (200ยฐC fan) and lightly grease a baking tray.
๐Ÿฅฃ Tip the flour into a large mixing bowl and rub the butter in with your fingertips until it resembles fine breadcrumbs.
๐Ÿง‚ Stir in the salt, mustard powder, and most of the grated cheese, saving a little for topping.
๐Ÿฅ› Gradually add the milk, mixing with a knife until you form a soft, but not sticky, dough.
๐Ÿงค Turn the dough out onto a floured surface and knead very lightly to bring it together.
๐Ÿงฒ Pat the dough out to about 2cm thickness and cut into rounds with a 5cm cutter, pressing straight down without twisting.
๐Ÿฅ„ Place onto the prepared tray, brush with beaten egg, and sprinkle the tops with the remaining cheese.
๐Ÿ”ฅ Bake for 10โ€“12 minutes until risen, golden, and smelling irresistible.
๐ŸงŠ Cool slightly on a wire rack before serving โ€” if you can resist!
