🛒 Ingredients:
For the Chicken 🍗:
8 chicken drumsticks
2 tbsp olive oil
2 tsp smoked paprika
1 tsp garlic powder
1 tsp dried oregano
Salt & pepper
For the Vegetables 🥔🌶️:
600 g potatoes, peeled & cubed
1 red bell pepper, diced
1 green bell pepper, diced
1 onion, chopped
2 tbsp olive oil
1 tsp dried thyme or rosemary
Salt & pepper
Optional Garnish:
Fresh parsley, chopped
Lemon wedges
👨🍳 Instructions:
Preheat oven to 200°C (400°F). In a large bowl, coat chicken drumsticks with olive oil, paprika, garlic powder, oregano, salt, and pepper. Toss potatoes, peppers, and onion with olive oil, herbs, salt, and pepper, then spread evenly in a large baking dish. Nestle chicken drumsticks on top. Roast uncovered for 50–55 minutes, turning chicken halfway through, until golden brown and fully cooked. Garnish with fresh parsley and serve with lemon wedges.
