Garlic Butter Steak Tips with Cheesy Rotini in Mozzarella Sauce

Ingredients:

1 ½ lbs sirloin or ribeye steak, cut into thick bite-sized tips
1 tablespoon olive oil
4 tablespoons unsalted butter, divided
4 cloves garlic, minced
1 teaspoon Cajun seasoning
Salt and freshly cracked black pepper, to taste
12 oz rotini pasta
1 ¼ cups heavy cream
1 cup whole milk
2 ½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
½ teaspoon Italian seasoning
Fresh parsley, chopped (for garnish)

Directions:

1. Bring a large pot of salted water to a boil and cook the rotini until al dente. Drain, reserving ½ cup of the cooking water.
2. Pat the steak tips dry and season with Cajun seasoning, salt, and black pepper.
3. Heat olive oil and 2 tablespoons of butter in a skillet over medium-high heat. Sear the steak tips in batches for about 2–3 minutes per side until browned and tender. Remove to a plate and keep warm.
4. Reduce the heat to medium. Add the remaining butter and minced garlic to the skillet, cooking until fragrant, about 1 minute.
5. Stir in the heavy cream and milk, whisking until smooth. Add mozzarella and Parmesan, stirring until the cheese melts into a thick, glossy sauce.
6. Sprinkle in Italian seasoning and adjust with salt and pepper to taste. Thin the sauce with reserved pasta water if needed.
7. Toss the cooked rotini into the sauce, coating each spiral with cheesy goodness.
8. Serve the pasta on one side of the plate and arrange the garlic butter steak tips beside it, or combine them together. Garnish with parsley before serving.
