Hearty Split Pea Soup with Vegetables and Ham
Ingredients:
2 cups dried split peas, rinsed
1-2 cups diced ham or smoked bacon (optional for flavor)
2 medium carrots, peeled and diced
2 medium potatoes, peeled and diced
1 medium onion, finely chopped
2-3 cloves garlic, minced
1-2 bay leaves
1 tsp dried thyme (or fresh thyme if available)
Salt and pepper to taste
7-8 cups vegetable or chicken broth (or water)
Olive oil or butter for sautΓ©ing
Instructions:
1. SautΓ© the Vegetables: In a large pot, heat some olive oil or butter. Add the chopped onions, carrots, and garlic, and sautΓ© for about 5 minutes until the onions are soft and translucent.
2. Add Split Peas and Ham: Stir in the split peas and diced ham (if using). Let them mix with the vegetables for a minute.
3. Pour in Broth: Add the broth (or water), bay leaves, and thyme. Bring the soup to a boil.
4. Simmer the Soup: Reduce the heat to a low simmer and let it cook for 45-60 minutes, stirring occasionally. The split peas will start to break down and thicken the soup.
5. Add Potatoes: About 20 minutes before the soup is done, add the diced potatoes. Continue simmering until the potatoes are tender.
6. Season: Taste the soup and season with salt and pepper as needed.
7. Serve: Serve hot, garnished with fresh herbs like parsley if desired.
