Ingredients (4 servings)
4 chicken thighs or breasts, boneless & skinless
2 tbsp olive oil or butter
3 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
½ cup grated parmesan cheese
1 tsp Italian seasoning
Salt & pepper to taste
Fresh parsley for garnish
2 packs shirataki noodles (or zucchini noodles for variation)
Directions
Prepare noodles: Rinse shirataki noodles under warm water, then boil for 2–3 minutes. Drain and set aside.
Cook chicken: Season chicken with salt, pepper, and Italian seasoning. Heat olive oil or butter in a skillet and sear chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
Make sauce: In the same skillet, sauté garlic for 1 minute. Add chicken broth and let it simmer. Stir in heavy cream and parmesan, cooking until the sauce thickens.
Combine: Return chicken to the skillet, spoon sauce over, and let simmer 3–4 minutes.
Assemble: Place shirataki noodles on a plate, top with chicken and sauce. Garnish with parsley.
