Grilled Steak Bites with Garlic Herb Roasted Potatoes in Foil
Ingredients:
1 lb (450g) sirloin steak or filet mignon, cut into bite-sized cubes
1 lb baby potatoes, halved
3 cloves garlic, minced
3 tbsp olive oil
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp red pepper flakes (optional)
Salt and freshly ground black pepper to taste
Fresh parsley, chopped for garnish
Aluminum foil
Instructions:
Prep potatoes: In a bowl, toss halved baby potatoes with 1.5 tbsp olive oil, minced garlic, oregano, thyme, salt, pepper, and red pepper flakes if using.
Prep steak: In a separate bowl, toss steak cubes with remaining olive oil, salt, and pepper.
Assemble foil packets: Tear off a large sheet of heavy-duty aluminum foil. Spread the seasoned potatoes evenly in the center. Place the steak cubes on top of the potatoes. Fold the foil over and seal tightly to create a packet.
Cook: Preheat your grill to medium-high heat. Place the foil packet on the grill and cook for 20-25 minutes, turning once halfway through, until the potatoes are tender and the steak is cooked to your preferred doneness.
Alternatively, you can bake the foil packet in a preheated oven at 400°F (200°C) for about 25-30 minutes.
Finish and serve: Carefully open the foil packet (watch for steam). Sprinkle with fresh chopped parsley. Serve immediately.
Tips:
For extra flavor, add a splash of balsamic vinegar or Worcestershire sauce to the steak before grilling.
Add chopped onions or bell peppers inside the foil packet for extra veggies.
Serve with a simple green salad or steamed vegetables.
