Spicy Jalapeño Popper Crunchy Thai Chickpea Salad

Ingredients:
1 can (15 oz) chickpeas, drained and rinsed
1 cup shredded carrots
1 cup chopped red bell pepper
1/2 cup chopped green onions
1/2 cup diced cucumber
1/4 cup chopped fresh cilantro
1/4 cup mayonnaise
2 tbsp sriracha sauce
1 tbsp lime juice
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/2 cup crushed tortilla chips

Directions:
In a large mixing bowl, combine the chickpeas, shredded carrots, red bell pepper, green onions, cucumber, and cilantro. Toss gently to mix the ingredients evenly.
In a separate small bowl, whisk together the mayonnaise, sriracha sauce, lime juice, garlic powder, salt, and black pepper until smooth.
Pour the dressing over the chickpea mixture and stir until everything is well coated.
Just before serving, sprinkle the crushed tortilla chips on top for added crunch.
Serve immediately for the best texture, or refrigerate for up to an hour to allow the flavors to meld.
