Hearty Protein-Rich Chickpea & Lentil Sausage with Bold Spices 🌭🧄

Ingredients:
• 1 cup cooked chickpeas (200 g)
• 1/2 cup cooked green lentils (100 g)
• 1/4 cup cooked quinoa (approx. 43 g)
• 1/2 cup rolled oats (45 g)
• 1 small onion, finely chopped (approx. 1/2 cup, 70 g)
• 3 cloves garlic, minced
• 1 tbsp tomato paste (15 ml)
• 1 tbsp nutritional yeast (10 g)
• 1 tsp smoked paprika
• 1/2 tsp ground cumin
• 1/2 tsp garlic powder
• 1/4 tsp cayenne pepper (optional for extra heat)
• Salt and pepper to taste
• 1/4 cup vegetable broth (60 ml)
• 1 tbsp olive oil (15 ml)

Directions:
1. In a large bowl, combine the chickpeas, green lentils, quinoa, rolled oats, and chopped onion.
2. Stir in minced garlic, tomato paste, nutritional yeast, smoked paprika, cumin, garlic powder, cayenne pepper, salt, and pepper.
3. Mix in the vegetable broth and lightly mash the mixture to achieve a chunky, protein-packed consistency.
4. Form the mixture into thick sausage patties.
5. Heat olive oil in a skillet over medium heat and cook the patties for about 4–5 minutes per side until nicely browned.
6. Serve hot with toast or a fresh salad.
