🛒 Ingredients:
For the Bowl:
1 chicken breast, grilled and sliced 🍗
1/2 cup cooked white rice 🍚
1/3 cup canned chickpeas, rinsed and drained
1/2 cup mixed olives (green, Kalamata) 🫒
1/2 cucumber, thinly sliced 🥒
For the Tzatziki Sauce:
1/2 cup Greek yogurt
1/4 cucumber, grated and squeezed
1 small garlic clove, minced 🧄
1 tbsp fresh dill, chopped 🌿
1 tsp lemon juice 🍋
Salt & pepper to taste
👨🍳 Instructions:
Grill the chicken: Season the chicken breast with salt, pepper, garlic powder, and olive oil. Grill or pan-sear for about 5–6 minutes per side, then slice.
Make tzatziki: Mix Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper in a bowl. Stir well and chill if desired.
Assemble bowl: In each bowl, place rice as the base. Arrange sliced chicken, chickpeas, cucumber slices, and olives on top.
Top with tzatziki and garnish with extra dill or a crack of black pepper. Enjoy fresh!
