Dinner was soooo good π₯π₯π₯
I simmered a bunch of chicken breasts on low in Siete enchilada sauce until tender.
Plated a bunch of things I had in the fridge & freezer.
The dressing is what REALLY brought everything together! In a blender I added: 2 cups lowfat cottage cheese + juice of 2 limes + 2 whole jalapeΓ±os (seeded) + a bunch of cilantro + a fresh garlic clove + sea salt & pepper to taste
Simply blend everything together until smooth - taste test & add whatever you want!
Basically it's SUPER FLAVORFUL protein dressing!
