Cajun Beef Velveeta Pasta
Ingredients:
1 lb ground beef
12 oz bowtie pasta (farfalle)
1 tablespoon Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon crushed red pepper flakes (adjust to heat preference)
1 tablespoon olive oil
1 small onion, diced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 (10 oz) can Rotel tomatoes (with chilies), undrained
1 cup beef broth
1 cup milk
8 oz Velveeta cheese, cubed
4 oz cream cheese, softened
Salt and pepper, to taste
Fresh parsley or chopped green onions, for garnish (optional)
Directions:
Cook the bowtie pasta according to package directions. Drain and set aside.
In a large skillet or pot, heat olive oil over medium-high heat. Add diced onion and bell peppers, and sauté for 3–4 minutes until softened.
Add the ground beef and cook until browned. Drain excess grease if needed.
Stir in Cajun seasoning, smoked paprika, red pepper flakes, and a pinch of salt and pepper. Cook for 1 more minute.
Add Rotel, beef broth, and milk. Bring to a light simmer.
Stir in Velveeta and cream cheese. Mix until completely melted and the sauce is smooth.
Add cooked pasta to the sauce and toss until fully coated. Let it simmer for 2–3 minutes to thicken slightly.
Garnish with chopped parsley or green onions before serving.
