Traditional Scottish Stovies π₯π
A beloved comfort food in Scotland, stovies is a hearty and warming dish thatβs perfect for using up leftovers. With tender potatoes, onions, and meat (traditionally leftover roast beef or sausage), this dish is simmered to perfection in a rich, savoury gravy. Ideal for a satisfying meal on chilly days!
Ingredients:
π₯ Potatoes: 600g, peeled and sliced
π Leftover cooked beef or sausages: 300g, cut into chunks (or use corned beef for a different twist)

Onion: 1 large, chopped
π§ Beef stock: 500ml
π§ Butter: 30g
π§ Salt: 1 tsp
π§ Ground black pepper: to taste
πΏ Fresh parsley: for garnish (optional)
Method:
π In a large pot, melt the butter over medium heat. Add the chopped onion and cook for 5-6 minutes, until softened and translucent.
π₯ Add the sliced potatoes to the pot and stir well to coat them in the butter and onions.
π Add the cooked meat to the pot, followed by the beef stock. Season with salt and pepper.
π§βπ³ Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 30-40 minutes, stirring occasionally, until the potatoes are tender and the flavours have melded together.
π§βπ³ If the mixture becomes too dry, add a little more stock or water to keep it moist. Stir occasionally to prevent the potatoes from sticking to the bottom.
π΄ Once the potatoes are soft and the dish has thickened into a stew-like consistency, remove from the heat.
πΏ Garnish with fresh parsley and serve hot, ideally with crusty bread on the side.
