Date Walnut Breakfast Cookies 🍪😋
Ingredients:
1 cup rolled oats
1 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup coconut oil, melted
1/2 cup honey or maple syrup
1 large egg
1 teaspoon vanilla extract
1/2 cup chopped dates
1/2 cup chopped walnuts
1/4 cup shredded coconut (optional)
1/4 cup dark chocolate chips (optional)
Directions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
In a large bowl, mix melted coconut oil, honey (or maple syrup), egg, and vanilla extract until smooth.
Gradually add the dry ingredients to the wet ingredients and stir until combined.
Fold in chopped dates, walnuts, shredded coconut, and chocolate chips, if using.
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
Bake for 10–12 minutes or until golden brown around the edges.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
