¾ cup cold sparkling water (or more as needed)
1 cup shredded coconut (optional, for coating)
Vegetable oil, for frying
Honey, powdered sugar, or caramel sauce (optional, for serving)
Toasted coconut flakes (optional, for garnish)
Instructions
Prepare the Pineapple:

Peel, core, and slice the pineapple into ½-inch thick rings. Pat them dry with a paper towel to remove excess moisture.

Make the Batter:

In a mixing bowl, whisk together the flour, cornstarch, sugar, baking powder, and salt.

Gradually add the cold sparkling water, whisking until the batter is smooth and slightly thick. If the batter is too thick, add a splash more sparkling water.

Heat the Oil:

In a deep skillet or pot, heat 2-3 inches of vegetable oil to 350°F (175°C). Use a thermometer to maintain the temperature.

Coat the Pineapple:

Dip each pineapple ring into the batter, ensuring it’s fully coated. For extra crunch, press the battered rings into shredded coconut (if using).

Fry the Pineapple:

Carefully place the coated pineapple rings into the hot oil, frying in batches to avoid overcrowding.

Fry for 2-3 minutes per side, or until golden brown and crispy. Use a slotted spoon to transfer the rings to a paper towel-lined plate to drain excess oil.
