Pot Roast over Mashed Potatoes 🍖🥔
Ingredients:
For the pot roast:
🍖 3-4 lbs chuck roast
🧂 Salt and pepper to taste
🧈 2 tbsp olive oil
🧅 1 onion (chopped)
🥕 4 carrots (sliced)
🥔 3-4 potatoes (peeled and quartered)
🥦 2 cups beef broth
🌿 2-3 sprigs fresh thyme
🌿 2-3 sprigs fresh rosemary
🍷 1 cup red wine (optional)
For the mashed potatoes:
🥔 2 lbs potatoes (peeled and cubed)
🧈 4 tbsp butter
🥛 ½ cup milk
🧂 Salt and pepper to taste
Instructions:
🍖 Sear the roast: Season the chuck roast with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned. Transfer to a slow cooker or Dutch oven.
🧅 Sauté the vegetables: In the same skillet, add the chopped onion and carrots. Sauté for 3-4 minutes until softened, then add to the roast.
🥔 Add broth and herbs: Add the quartered potatoes, beef broth, thyme, rosemary, and red wine (if using) to the pot.
🔥 Cook: Cover and cook on low for 6-8 hours in a slow cooker or simmer on low heat in the oven (at 325°F/160°C) for about 3-4 hours until tender.
🥔 Make the mashed potatoes: Boil the potatoes in salted water until tender (about 15-20 minutes). Drain and return to the pot.
🧈 Mash: Add butter, milk, salt, and pepper to the potatoes. Mash until smooth and creamy.
🍽 Serve: Slice the pot roast and serve over a generous scoop of mashed potatoes, drizzling with the cooking juices.
