Mini Apple Pies
Ingredients:
2 refrigerated pie crusts (or homemade)
3 medium apples, peeled and diced
1/4 cup granulated sugar
1/4 cup brown sugar
2 teaspoons cinnamon
1 tablespoon all-purpose flour
1 teaspoon lemon juice
1/4 teaspoon nutmeg
1 tablespoon butter, cut into small pieces
1 egg (for egg wash)
Optional: caramel sauce for drizzling
Directions:
Preheat the oven to 375°F (190°C). Lightly grease a muffin tin.
Roll out the pie crusts and cut 12 circles to line each muffin cup. Press them in gently.
In a bowl, mix diced apples, both sugars, cinnamon, flour, lemon juice, and nutmeg until well combined.
Fill each crust with the apple mixture, then top each with a few tiny butter cubes.
Use remaining dough to cut strips and create lattice tops over the pies.
Beat the egg and brush the tops of the pies for a golden finish.
Bake for 22–26 minutes or until golden and bubbly.
Cool slightly, then drizzle with caramel if desired before serving.
