Seared Salmon with Zucchini and Cherry Tomato Pasta
Pan-Seared Salmon Over Zucchini and Cherry Tomato Pasta Delight
Ingredients:
2 salmon fillets
8 oz spaghetti or linguine
2 tablespoons olive oil, divided
2 zucchinis, sliced into thin half-moons
1 cup cherry tomatoes, halved
3 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes (optional)
Salt and pepper to taste
Fresh basil leaves for garnish
Lemon wedges for serving
Directions:
Cook pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
Season salmon fillets with salt and pepper.
Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear salmon fillets skin-side down first for about 4-5 minutes, then flip and cook another 2-3 minutes until cooked through. Remove and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Sauté garlic for 1 minute until fragrant.
Add zucchini and cherry tomatoes. Cook for 4-5 minutes, stirring occasionally, until the zucchini is tender and the tomatoes start to soften.
Toss the cooked pasta into the skillet with the vegetables. Add oregano, red pepper flakes, and a splash of reserved pasta water to create a light sauce. Adjust seasoning as needed.
Plate the pasta and vegetables, topping each serving with a seared salmon fillet. Garnish with fresh basil and serve with lemon wedges.
