Rhubarb Butter Recipe
Ingredients:
1 cup rhubarb, chopped
1/4 cup granulated sugar
1/4 cup unsalted butter, softened
Directions:
Prepare the Rhubarb:
Wash and chop the rhubarb into small pieces.
Cook the Rhubarb:
In a saucepan, combine the chopped rhubarb and sugar. Cook over medium heat, stirring occasionally, until the rhubarb softens and breaks down, about 10-15 minutes.
Blend the Mixture:
Transfer the cooked rhubarb mixture to a food processor or blender and blend until smooth.
Combine with Butter:
In a bowl, mix the softened butter with the rhubarb puree until fully combined.
Chill and Serve:
Transfer the rhubarb butter to a jar or container and chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve on toast, scones, or muffins.
