Ingredients:
- 3 large eggs
- 1/2 cup (100g) granulated sugar
- 1 tsp vanilla extract
- 2/3 cup (85g) all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- Pink and blue food coloring (gel recommended)
- 1/2 cup (120ml) heavy whipping cream
- 2 tbsp powdered sugar
- 1/4 tsp cotton candy flavoring
- Cotton candy for garnish (optional)
Instructions:
1. Preheat your oven to 350°F (175°C) and prepare a 10x15 inch (25x38 cm) jelly roll pan by lining it with parchment paper and lightly greasing it.
2. Beat the eggs in a bowl on high speed for 3–4 minutes until they become thick and pale. Gradually stir in the sugar and vanilla, continuing to mix until the mixture is light and fluffy.
3. In a separate bowl, combine flour, baking powder, and salt. Gently fold this dry mixture into the egg mixture until just blended.
4. Divide the batter into two bowls. Color one with pink and the other with blue food coloring. Place spoonfuls of each color randomly in the pan, then lightly swirl together with a toothpick for a cotton candy look.
5. Bake for 10–12 minutes, or until the cake springs back when touched.
6. Immediately invert the cake onto a clean kitchen towel that has been dusted with powdered sugar. Remove the parchment, then carefully roll the cake up with the towel from the short side. Allow it to cool completely while rolled.
7. In a chilled bowl, whip together the heavy cream, powdered sugar, and cotton candy flavoring until stiff peaks form.
8. Once cool, gently unroll the cake and spread the whipped cream evenly on top. Carefully re-roll the cake without the towel.
9. Chill for at least 1 hour before serving. If desired, add small pieces of real cotton candy for garnish just before serving.
