4 salmon fillets (about 6 oz each)
2 tbsp olive oil 🫒
3 tbsp honey 🍯
2 tbsp soy sauce 🥢
3 garlic cloves (minced) 🧄
1 tsp paprika

1/4 tsp black pepper
Juice of 1/2 lemon 🍋
For the Mashed Potatoes 🥔
4 medium red potatoes (cubed, skin-on optional)
3 tbsp butter 🧈
1/4 cup milk (or heavy cream) 🥛
Salt and pepper to taste
For the Roasted Asparagus 🌿
1 lb asparagus (trimmed)
2 tbsp olive oil 🫒
1 garlic clove (minced) 🧄
1/4 tsp salt
1/4 tsp black pepper
2 tbsp grated Parmesan (optional)
Instructions
Prepare the Salmon: Preheat the oven to 375°F (190°C). In a small bowl, mix honey, soy sauce, minced garlic, lemon juice, and paprika. Heat olive oil in an oven-safe skillet over medium heat. Season salmon fillets with salt and pepper, then sear them skin-side up for 2-3 minutes until golden. Flip, pour the honey garlic sauce over the salmon, and bake in the oven for 10-12 minutes until fully cooked and flaky.
Make the Mashed Potatoes: While the salmon is baking, boil the cubed potatoes in salted water until tender (about 15 minutes). Drain and mash with butter, milk, salt, and pepper. Adjust consistency with more milk if needed.
Roast the Asparagus: Toss the asparagus with olive oil, minced garlic, salt, and pepper. Arrange on a baking sheet in a single layer and roast in the oven alongside the salmon for 10-12 minutes. Sprinkle Parmesan on top during the last 2 minutes if desired.
Serve: Plate the salmon with a drizzle of the sauce, mashed potatoes, and roasted asparagus. Garnish with fresh parsley or lemon wedges if you like.
Notes & Variations
Swap salmon for trout, cod, or even chicken breasts!
For extra creaminess, add sour cream to the mashed potatoes.
