Chicken Tortellini in Creamy Cajun Garlic Parmesan Sauce
Ingredients:
1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
2 cloves garlic, minced
2 tsp Cajun seasoning
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
20 oz cheese tortellini, fresh or frozen
4 tbsp butter
1/4 cup all-purpose flour
3 cups milk
1 cup heavy cream
4 oz cream cheese, softened
1 cup shredded Parmesan cheese
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/4 cup grated Romano cheese
1 tsp garlic powder
1/2 tsp Italian seasoning
Directions:
1. Season chicken with Cajun seasoning, paprika, salt, and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
3. Cook tortellini according to package directions. Drain and set aside.
4. In the same skillet, melt butter over medium heat. Whisk in flour until smooth. Gradually whisk in milk and heavy cream until smooth and thickened, about 3-5 minutes.
5. Reduce heat to low. Stir in cream cheese, Parmesan cheese, mozzarella cheese, cheddar cheese, Romano cheese, garlic powder, and Italian seasoning until cheeses are melted and sauce is smooth.
6. Add cooked chicken and tortellini to the cheese sauce. Toss to coat evenly.
7. Simmer for 5 minutes, stirring occasionally, until heated through and sauce has thickened slightly.
8. Serve immediately, garnished with extra Parmesan cheese, if desired.
