Keto Chocolate Pecan Crunch Bites
Ingredients
For the “Cracker” Base:
1 ½ cups mozzarella cheese (shredded, low-moisture)
2 tbsp cream cheese
1 cup almond flour
1 egg
Pinch of salt
For the Topping:
½ cup sugar-free chocolate chips (Lily’s, ChocZero, or similar)
1 tsp coconut oil or butter (helps melting smoothly)
½ cup pecans (halved or chopped)
1–2 tbsp powdered erythritol (optional, for extra sweetness)
Instructions
1. Make the Keto Crackers
Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
In a microwave-safe bowl, melt mozzarella and cream cheese together (about 1 min, stirring halfway).
Stir in almond flour, egg, and salt until dough forms.
Roll dough thin between two sheets of parchment.
Cut into cracker-sized squares using a knife or pizza cutter.
Bake 10–12 minutes, until golden and crisp. Let cool completely.
2. Prepare the Chocolate Topping
Melt chocolate chips with coconut oil until smooth.
Spoon or spread melted chocolate over cooled crackers.
3. Add Pecans
Sprinkle pecan halves or chopped pecans over the melted chocolate.
Optional: dust lightly with powdered sweetener for extra “candied” flavor.
4. Set & Serve
Let cool at room temp or place in the fridge for 15–20 mins until chocolate sets.
Serve stacked like candy bark or in a bowl for snacking.
💡 Tips & Variations
Swap pecans for walnuts, almonds, or hazelnuts.
For a salted caramel twist, drizzle a little keto caramel sauce over the chocolate before it sets.
Store in an airtight container in the fridge for up to 7 days.
