Strawberry Pineapple Pound Cake

Ingredients:

For the Pound Cake:
- 3 cups all-purpose flour
- 2½ cups granulated sugar
- 1 cup unsalted butter, softened
- ½ cup vegetable oil
- 5 large eggs, room temperature
- 1 cup sour cream
- 1 tsp vanilla extract
- ½ tsp almond extract (optional)
- 1 tsp baking powder
- ¼ tsp salt

For the Strawberry Layer:
- 1½ cups fresh strawberries, sliced
- 2 tbsp granulated sugar
- 1 tbsp cornstarch
- ½ tsp lemon juice

For the Pineapple Layer:
- 1 can (20 oz) crushed pineapple, well-drained
- 2 tbsp brown sugar

For the Strawberry Glaze:
- 1 cup powdered sugar
- 2 tbsp strawberry puree (fresh or from jam)
- 1–2 tsp milk, as needed for consistency

Directions:

1. Preheat the oven to 325°F (163°C). Grease and flour a 10-inch bundt pan.
2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
3. In a large mixing bowl, cream the softened butter, vegetable oil, and granulated sugar until light and fluffy.
4. Add eggs one at a time, beating well after each addition.
5. Mix in sour cream, vanilla extract, and almond extract if using.
6. Gradually add the flour mixture to the wet ingredients, mixing just until combined.
7. Prepare the strawberry layer by combining strawberries, granulated sugar, cornstarch, and lemon juice in a small bowl. Set aside.
8. Prepare the pineapple layer by mixing drained crushed pineapple with brown sugar in another bowl.
9. Pour half of the batter into the prepared bundt pan.
10. Spoon the strawberry mixture evenly over the batter.
11. Spread the remaining batter over the strawberry layer.
12. Carefully spoon the pineapple mixture on top.
13. Using a knife or skewer, gently swirl the layers together to create a marbled effect.
14. Bake for 65-75 minutes or until a toothpick inserted into the center comes out clean.
15. Let the cake cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
16. For the glaze, whisk together powdered sugar, strawberry puree, and milk until smooth. Drizzle over the cooled cake before serving.
