SALMON TRAY BAKE - EASY & HEALTHY! ✨️🍣
This salmon tray bake is a quick dinner recipe that combines tender salmon fillets with a medly of colourful vegetables, all roasted to perfection with a zesty olive oil and fresh herb dressing 🫶

RECIPE - Serves 3
Ingredients 🛒
3 Salmon Fillets

Marinade:
4 Sprigs Thyme
2 Sprigs Rosemary
1 Tsp Dried Oregano
1 Tsp Dried Parsley
4 Cloves Garlic, minced
1 Tsp Lemon Zest
1 Tbsp Lemon Juice
1 1/2 Tbsp Sweet Chilli Sauce
1/4 Cup Extra-Virgin Olive Oil

Vegetables:
1 Broccoli florets, cut in half
1 Red Bell Pepper, roughly chopped
1 Yellow Bell Pepper, roughly chopped
1 Large Zucchini, sliced into half moon shapes
2 Small Red Onions, cut into wedges
Olive Oil
Salt & Pepper to taste

Method:
Preheat oven to 200C/400F.
In a small jug, combine marinade ingredients and generously rub fish from both sides.
In a baking tray, add the vegetables. Drizzle with olive oil and season with salt and pepper. Mix together and bake in oven for 15 minutes.
Remove from oven, arrange the salmon inbetween the veggies and pour remaining marinade over vegetables. Bake for 10-15 minutes, or until salmon is cooked through.
Garnish with fresh parsley and lemon slices.
