Keto Cheeseburger "Mac" & Cheese
Ingredients
For the “mac” base:
1 (12 oz) bag of low-carb pasta (like Palmini, shirataki, or lupin flour pasta)
– OR 1 medium head of cauliflower, cut into small florets (roasted or steamed)
For the beef mixture:
1 lb ground beef
2 tbsp butter or olive oil
1/2 medium onion, diced (optional)
2 cloves garlic, minced
1/2 cup diced tomatoes (or Rotel, drained well)
Salt & pepper to taste
1 tsp paprika
1/2 tsp chili powder (optional, for kick)
For the cheese sauce:
1 cup heavy cream
2 tbsp cream cheese
2 cups shredded cheddar cheese (or mix of cheddar & mozzarella)
1/2 tsp mustard powder (optional, adds depth)
Instructions
Prep the “mac”:
If using low-carb pasta, cook according to package and drain well.
If using cauliflower, steam or roast until tender but not mushy.
Cook beef mixture:
In a skillet, cook ground beef until browned. Drain excess fat.
Add onion, garlic, tomatoes, and seasonings. Cook until softened and flavors combine.
Make cheese sauce:
In a saucepan, heat heavy cream and cream cheese until smooth.
Stir in shredded cheese a little at a time until melted and creamy.
Add mustard powder if using.
Combine:
Mix pasta/cauliflower, beef mixture, and cheese sauce together.
Pour into a baking dish, sprinkle extra cheese on top, and bake at 375°F (190°C) for 15 minutes until bubbly — OR serve immediately creamy-style.
