Italian Cucumber Salad 🥗🥒
This classic summertime side dish pairs perfectly with BBQ and burgers. It's easy to make and can be prepared a day in advance.
**Ingredients:
- 2 large cucumbers
- 1 pint cherry tomatoes
- 1 medium sweet onion
- 1 cup Italian dressing (about 1/2 a bottle)
- 1 tbsp Italian seasoning
- 1 tsp cracked pepper
- 1 tsp garlic powder
**Instructions:
1. **Prepare the Vegetables:
- Rinse and slice the cucumbers into 1/4-inch slices.
- Rinse and halve the cherry tomatoes.
- Halve the onion, then slice it into thin 1/8-inch slices.
2. **Combine Ingredients:
- In a large bowl, combine the cucumber slices, halved tomatoes, and sliced onion.
3. **Season and Mix:
- Pour in the Italian dressing, then add the Italian seasoning, cracked pepper, and garlic powder.
- Stir until all the ingredients are well combined.
4. **Refrigerate:
- Cover and refrigerate the salad for at least 2 hours to let the flavors meld.
**Tips:
- Using a mandolin or slicer can make the preparation much easier and quicker.
