Keto Pound Cake (Loaf Cake)
Ingredients
2 cups almond flour
¼ cup coconut flour
1 tsp baking powder
½ tsp salt
½ cup unsalted butter (softened)
½ cup cream cheese (softened)
1 cup erythritol or monk fruit sweetener (powdered)
4 large eggs (room temp)
1 tsp vanilla extract
2 tbsp heavy cream
Optional: zest of 1 lemon (for lemon pound cake) or 2 tbsp cocoa powder (for marble effect)
Instructions
Preheat oven
Heat oven to 350°F (175°C). Line a loaf pan with parchment paper.
Mix dry ingredients
In a bowl, whisk almond flour, coconut flour, baking powder, and salt.
Cream butter & cheese
In a large mixing bowl, beat butter, cream cheese, and sweetener until fluffy.
Add eggs & flavor
Mix in eggs one at a time, then add vanilla and heavy cream.
Combine
Slowly fold in dry ingredients until smooth.
Optional swirl
If making marble style, separate ⅓ of the batter, mix with cocoa powder, then swirl it into the main batter.
Bake
Pour into loaf pan and bake for 45–55 minutes, until golden and a toothpick comes out clean.
Cool & serve
Let cool completely before slicing.
